    TALONG / EGGPLANT




    Eggplant or talong is considered one of the healthiest vegetables in the world. It is high in antioxidants. Talong is popular vegetable known for its beautiful shape  and color as well as for its unique taste and texture. Talong are related to potato, tomato and bell pepper where the fruit hang from the vines of a plant. It is commonly use in cooking.


    Talong has it own health benefits:

    Studies on talong fruit have identified anthocyanin phytonutrient called nasunin. Nasunin has been found to protect the cell membranes from damage. They found also a compound called chlorogenic and gallic acid.

    Talong as vegetable is generally safe and even recommended as fit for daily consumption by children and pregnant women. However, if you are experiencing kidney problem, have to moderate the intake of oxalate or any foods including talong. Oxalates when plenty can accumulate and crystallize in kidney and gallbladder.

    Talong is rich in Phenolic Antioxidant Compound. Plant form such compounds protect themselves against oxidation stress from exposure to the elements, as well as from infection by bacteria and fungi.


    Talong is a very good source of dietary fiber, vitamin B1 and coper. It is a good source of manganese, vitamin B6, niacin, potassium, folate and vitamin K.

    Tortang talong



    •  4 eggplant / talong
    •  3 eggs
    •  salt to taste
    • oil for cooking

    How to prepare

    1. Grill the eggplant or talong i a stove or grill it in Filipino way in the "ULING". Cool the egplant or talong and then peel of the skin. When a talong is grill in uling, it smells delicious.
    2.  Beat the egg , add salt and place the talong on top and make sure it well coated.
    3. Heat some oil in frying pan. Fry the talong until it has set and turned lovely golden brown.

    Pritong Talong




    • 4 pcs Talong
    • Oil
    • Soy sauce and vinegar (I used this for pritong talong dip)

    How to Prepare


    1.  Sliced three (3) portions lengthwise and cut in halves cross wise.
    2.  Fry the talong in 3 minutes on each side until golden brown.
    3.  Serve
